Noka no Sobaya Yoteizan, a farm soba restaurant in Kutchan, makes its noodles from buckwheat it grows itself, milled fresh and made with spring water from Mt. Yotei. Behind the restaurant is a pond, and on a still day the mountain is reflected upside down in it.
The soba

I had the tofu soba made with 100% buckwheat (1,300 yen) and a bowl of rice with freshly grated wasabi (1,100 yen). The tofu soba is topped with the best-selling tofu from Wakimizu no Sato, the tofu maker that runs the restaurant, and freshly shaved bonito flakes. The wasabi is sent straight from a wasabi farm in Azumino, Nagano; it is not very sharp, and it goes well with the bonito and the rice.

The menu
You choose 100% buckwheat (juwari), with the stronger buckwheat flavor, or 80% buckwheat (nihachi, slightly cheaper). A large portion is 200 yen extra, and there is an English menu. Prices from the official menu, October 2026, tax included:
- Seiro (chilled soba): 900 yen / 850 yen
- Tofu soba: 1,300 yen / 1,200 yen
- Shrimp tempura with chilled soba: 1,830 yen / 1,730 yen
- Duck seiro: 1,700 yen / 1,600 yen
- Kake (hot soba): 900 yen / 850 yen
- Herring soba (hot): 1,270 yen / 1,170 yen
- Fresh wasabi rice bowl (limited): 1,100 yen
For the purest taste of the soba, have the seiro.
